Chocolate dream – raw vegan cake

ingredients:
for the base:

200 g almonds

3 TBSP cocoa

2 TBSP maple sirup

2 TBSP coconut oil

1 pinch salt


for the cream:

200 g cashews

85 ml maple sirup

100 ml almond milk

1 vanilla bean

2 TSP lime juice

2 TBSP coconut oil

4 TBSP cocoa


and 1 package almond flakes
how it works:

Let the cashews soak in water on the evening before (they have to soak for about 7 -8 hours). Roast the almonds without oil in a pan and put them into the food processor together with the cocoa and the salt. Warm the coconut oil in a pot and then add the oil and the maple syrup to the dry mixture. Mix it, fill it in the spring form and then place it in the refrigerator.

After that put all ingredients for the cream in the food processor and mix it until it’s smooth. Get the form out of the fridge and give the mixture on the base. Roast the almond flakes in a pan and sprinkle them over the cake. The cake has to be in the fridge for about 4-5 hours.

Vanilla crescents

My grandmother’s recipe for vanilla crescents.

Ingredients:
300 g flour

200 g margarine

100 g sugar

100 g hazelnuts (ground)

70 g powdered sugar

3 packages vanilla sugar

how it works:

Mix the flour, the margarine, the sugar and the hazelnuts together. Then allow the dough to rise covered for about an hour in the fridge. Preheat the oven on 160°C. Form the crescents out of the dough and bake them for about 12 – 15 minutes. In the meantime mix the powdered sugar with the vanilla sugar. Let the crescents cool down a bit and then roll them in the sugar mixture.

Cashew chocolate spread

Ingredients:
about 200 g cashews
 
100 g dark chocolate
 
1 TSP cinnamon
 
1 TSP cocoa
 
1 vanilla bean
 
2 TSP vanilla sugar
 
1 TBSP coconut oil
 
1 TBSP oil
How it works:

Preheat the oven on 180°C and spread the cashews on a baking tray. Put them in the oven for about 8 minutes, but be careful that they don’t turn black. Give the nuts in a food processor and grind them. Add all the other ingredients and mix them together. Ready is your delicious chocolate spread. You can always add something, like cinnamon or maple syrup.
