Chickpea and vegetable stew with couscous

What you need (serves 4):
2 onions

2-3 gloves of garlic

400 g chickpeas

700 g potatoes

1 Tsp coriander

1 Tsp cumin

2 Tbsp oil

700 g tomatoes

600 ml vegetable broth
salt, pepper

300 g couscous

200 ml vegan cream

4 Tsp currypaste
How it works:

Prepare the onions and the garlic by slicing them thinly. Wash the chickpeas in a sieve and put them aside. Peel the potatoes and cut them in cubes. Pound the cumin and coriander with a spoon. Heat the oil in a large pot and put the garlic and onions in it. After a moment add the cumin, coriander and the currypaste. Then add the tomatoes, the vegetable broth, the potatoes and the chickpeas. Let the whole thing simmer for about 15 minutes until the potatoes are done. Prepare the couscous and let it soak. Add the vegan cream to the vegetables and let it boil for about 2 minutes. Now add the salt and pepper and voilá.


Coconut chocolate pralines

If you lust for some raw vegan pralines I have the perfect recipe for you. Come with me into the chocolate and coconut heaven! It’s such an easy recipe and they’re perfectly cold – super for an awfully hot day.

What you need:
100 g desiccated coconut

5 Tbsp coconut oil

2 Tbsp honey

1 Tsp vanilla sugar

30 g dark chocolate
How it works:

Melt the coconut oil in a pot and then mix with the honey, the vanilla sugar and the desiccated coconut. Form some balls and put them in the fridge. When they’re cooled down, melt the chocolate. Dip the coconut balls in the chocolate and sprinkle some desiccated coconut over them. Put back into the fridge and after a little while enjoy them.

Soup with potatoes and spinach

What you need (serves 4):
3 onions

3 cloves of garlic

500 g potatoes

200 g spinach

4 Tbsp oil

pepper, salt

1 l water with vegetable broth

3 - 5 slices of bread
How it works:

Prepare the onions and the garlic by slicing it thinly. Then peel the potatoes, wash them and dice them. Wash the spinach (if you got fresh one). Heat 2 Tbsp of oil in a big pot and put the garlic and the onions inside. After a moment add the potatoes and then the water with the vegetable broth. Let the whole thing come to a boil and then simmer for about 20 minutes. Add the spinach and let it boil again for about 3 minutes. Purée the soup and then set aside. Now for the croutons cut the slices of bread and heat 2 Tbsp of oil in a pan. Roast the cubes and voilá – your soup is ready to serve.
